Here a perfect recipe for the imminent winter, great for vegeterian but not only and, most important, cheap to prepare. My friends, you will make a good impression on your guests and they will ask you for the recipe…the proof of the pudding!
INGREDIENTS x 4 PEOPLE
300 g of boiled mashed carrots
300 g of boiled mashed cauliflower
3 eggs
50 g of Parmesan cheese
one piece of butter
100 g of ricotta cheese
salt and pepper to taste
nutmeg to taste
4 dry tomatoes
4 little moulds

METHOD
Boil cauliflower and carrots and blend them separately. Add to both compound the same quantity of beaten eggs (just 3 whites and 2 reds), Parmesan cheese, salt, pepper and nutmeg.
Grease the little moulds and fill them with half carrots and half cauliflower compound.
Bake in bain-marie at 320°F for about 35-40 minutes.
In the meantime blend the ricotta cheese with a little spoonful of tepid vegetable broth, salt and pepper.
Prepare the dish putting a layer of ricotta cheese cream and the flan decorated with sliced dry tomatoes.

Flan have to stay in the oven until the bain-marie water is tepid.
