This is a nice idea to enjoy one of the most succulent summer fruit for all over the year: apricots in syrup!

Try this recipe and experiment the aroma you like more to put in the syrup.

This delight is so fast and easy to prepare and it will pamper you during the cold winter nights, remembering you about the beautiful snack that you were having along the sea.

So…let’s syrup!

APRICOTS IN SYRUP

INGREDIENTS

1 kg apricots

2 lt water

400 g sugar

1 cinnamon stick

1 lemon, the juice and the peel

5 cloves

METHOD

Boil the water with sugar, cinnamon, cloves, lemon juice and peel (without the white part) for 5 minutes.

Let the syrup cool.

In the mean time wash and dry well the apricots without peeling them, remove the stone and cut them in quarters if they are big or leave them divided just in half.

Put the apricots in the jars and cover them completely with the cold, filtered syrup.

Close the jars air tightly and put them in a big pot full of cold water covering the jars.

Make the water boil for 10 minutes and let the jars cool inside.

Let them stand for at least one month before enjoying them.
