“Eating bread and onions”, this old proverb to remember us how hard can be this combination.

But, as you already know I guess, onion soup is one of the most beautiful dishes coming from poor cooking. All you need is to cook the onions to make them easy to digest. Crisp cheese and right presentation will complete the result and this dish will become one of your strong suit. From today, never forget to buy onions!


4 medium onions

one piece of butter

2 tbsp of evo oil

2 tbsp of flour

1 liter of meat broth

150 g of Gruyère cheese

12 slices of baguette bread

salt and pepper


Slice the onions thin and let them sweat in a covered pan on a very slow flame with butter and evo oil for 20 minutes. Onions have to become translucent.

After 20 minutes add flour, mix well and add the broth to cover the onions. Cover the pan and cook for 30 minutes. Add salt and pepper.

Pour some soup in small bowls, add toasted baguette bread and finish with abundant grated Gruyère cheese. Put the bowls in the oven under high grill for 5 minutes.

Onions have many healthy quality: full of vitamines, mineral salts, iron, manganese, potassium, magnesium, calcium, fluoroine, phosphor. Their juice is a natural antibacterial and they are so useful in case of cold.
