Anchovies make everything tasteful!

This delicious and original bread is perfect to be combined with a simple fresh salad or with a a buffalo mozzarella sandwich.

INGREDIENTS x 4 PEOPLE

500 g of 0 flour

25 g of brewer yeast

1 tsp of sugar

90 g of anchovies in oil with their own oil

evo oil to brush

half tsp of salt

METHOD

Break anchovies into pieces and keep them aside with their own oil. Put the flour on a pastry board and put the yeast and the sugar in the center. Slowly add 10 fl.oz of tepid water and start kneeding with the fingers until the yeast is melted. Then add salt and the anchovies, kneed well for 10 minutes and put the dough to rise for 20 minutes into a bowl covered with a plastic foil.

After 20 minutes kneed the dough a little bit more, divide into 8 parts and give the shape of an oval leaf, about the height of the picture here under. Emulsify 4 tbsp of water with 2 tbsp of evo oil and brush the leaves surface. Cover with a plastic foil and let rise for 20 minutes.

Then, make some fishbone incisions (like in the picture) and put the leaves on a baking pan covered with parchement paper.

Cook in the oven at 400°F putting a bowl of water under the baking pan for the first 10 minutes, then remove it and keep cooking for other 15 minutes.

Take the leaves out of the oven and…create your favourite combination!
