This recipe comes from my childhood. Now we call this kind of food comfort food, but I wonder why we need to make a simple and traditional food more glamour or fancy, why don’t we accept it just the way it is?
I give you this recipe to make the winter warmer, you will after decide if a comfort like this really needs a glamorous make up besides!
INGREDIENTS X 4 PEOPLE
FOR THE DOUGH
400 g of flour
one pinch of salt
FOR THE STUFFING
4 medium potatoes
1 big onion
eggs, as much as you need
To prepare the dough mix eggs with flour and salt, kneed well until the compound is smooth and let it rest in the fridge covedered with a plastic foil for one hour.
In the meantime boil and smash potatoes. Brown very slowly sliced onion in a piece of butter .
Add to the smashed potatoes onion, salt, nutmeg, parmesan cheese and one egg per time until the compound needs them (maximum 2 usually), it has to be thick.
Roll the dough quite thin and put some stuffing in the center of the dough in a distance of 0,8 inch, close it onto itself, press all around the stuffing to make the air out and cut ravioli with pasta cutter.
Boil them in boiling salty water and flavour with butter and parmesan cheese.
