Here are all the steps to make a simple recipe that tastes great and is suitable as a hot or cold dish. Appetizer, main course, or why not as a base for pasta sauce, to prepare it you really need anything: just the fresh octopus. Do not believe? So check it out.
INGREDIENTS for 4 people
1 kg and 300 g of fresh baby octopus
half a glass of good red wine
METHOD
Clean the octopus to eliminate the intenstin located in the head and the central rostrum in the middle of the tentacles. Wash them well under running water very cold.
Put a steel pot on the stove and pour the baby octopus without adding any other ingredient. Turn the heat to low, cover with lid and simmer over low heat for about 50-60 minutes. The baby octopus will cook very tasty in their water, so no salt! You will find them ready when a fork will easily fit in the flesh.

Before serving, let cool and peel the baby octopus.
At this point, turn the heat under the pot where the baby octopus water will be reduced. Add half a cup of red wine (good quality!) and let the sauce over high heat, it will take few minutes.
Season the baby octopus with red wine reduction and a bit of chopped parsley.
Olive oil and a few drops of lemon juice will give a touch of freshness to this delightful dish.
