A wintry delicacy to celebrate pumpkin (if it would be necessary!), like a very versatile ingredient depending on the situation. Here I give you a version for a main course to combine with a smoked flavour. You will love these rolls and you will ask for more!
INGREDIENTS FOR 4 PEOPLE
600 g of veal meat in thin slices
200 g of bacon in thin slices
450 g of cleaned pumpkin
grated parmesan cheese to taste
fresh majoram
pepper
1 clove of garlic
one onion
half a glass of white wine
METHOD
Cut pumpkin in small sticks.
Compose rolls putting on each slice of veal meat one slice of bacon, some pumpkin stick, pepper, parmesan cheese, some majoram leaves and close the roll with two toothpick.
Put a pan on medium flame with evo oil and add smashed garlic (with its own skin) and very thin sliced onion. Let it cook until garlic is golden brown and onion is translucent. Remove garlic, add cut pumpkin and cook for some minutes. Add rolls and let them brown, then white wine and let it evaporate. Now let rolls cook covered on a slow flame for about 30 minutes.
Once they are ready remove toothpick. Reduce pumpkin into a cream with a blender. Put the rolls on a plate and serve with pumpkin cream.
