{"id":4479,"date":"2012-08-23T16:05:00","date_gmt":"2012-08-23T16:05:00","guid":{"rendered":"http:\/\/gingerforbreakfast.it\/blog\/?p=4479"},"modified":"2018-04-16T08:47:49","modified_gmt":"2018-04-16T06:47:49","slug":"her-majesty-sicily-or-rather-sicilian-eggplants-caponata","status":"publish","type":"post","link":"https:\/\/gingerforbreakfast.it\/blog\/en\/her-majesty-sicily-or-rather-sicilian-eggplants-caponata\/","title":{"rendered":"HER MAJESTY SICILY or rather SICILIAN EGGPLANTS CAPONATA"},"content":{"rendered":"<p>It&#8217;s one of the most famous sicilian dish, with so many versions, all excellent.<\/p>\n<p>My recipe is coming from around Messina.<\/p>\n<p>Whatever is the recipe you taste, eggplants caponata&#8217;s alchemy is always a breathtaking surprise.<\/p>\n<p>The proof of the pudding!<\/p>\n<p><strong>SICILIAN EGGPLANTS CAPONATA<\/strong><\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<p>5 rounded eggplants<\/p>\n<p>200 gr pickled and stoned green olives<\/p>\n<p>50 gr pine nuts<\/p>\n<p>50\/70 gr capers in salt<\/p>\n<p>1 heart part of one celery<\/p>\n<p>evo oil<\/p>\n<p>salt<\/p>\n<p>white vinegar<\/p>\n<p>sugar<\/p>\n<p>garlic and onion<\/p>\n<p><strong>METHOD<\/strong><\/p>\n<p>Cut the eggplants into small cubes and let them in cold water with salt for one hour.<\/p>\n<p>Then rinse, dry well and fry them in very hot seeds oil (put a toothpick in the hot oil and if it immediately fries put the eggplants in the pot).<\/p>\n<p>Fry them until they become golden brown and then drain them well.<\/p>\n<p>In a large pan put the evo oil and fry, on a medium flame, the garlic and the onion very thin sliced.<\/p>\n<p>Let them cook for a while and then add capers, olives, pine nuts and celery cut into very small cubes.<\/p>\n<p>Cook all the ingredients for 8\/10 minutes and add the eggplants drained from oil.<\/p>\n<p>Add half a glass of white vinegar in which you have melted 4 teaspoons of sugar.<\/p>\n<p>Let make all tasty for about 5\/10 minutes, then switch the flame off and let the caponata cool for at least 4 hours.<\/p>\n<p>It\u2019s better to cook one day in advance.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s one of the most famous sicilian dish, with so many versions, all excellent.
