{"id":3089,"date":"2014-12-15T04:17:46","date_gmt":"2014-12-15T04:17:46","guid":{"rendered":"http:\/\/www.gingerforbreakfast.it\/?p=3089"},"modified":"2018-04-07T08:10:13","modified_gmt":"2018-04-07T06:10:13","slug":"baccala-mantecato-alla-veneziana","status":"publish","type":"post","link":"https:\/\/gingerforbreakfast.it\/blog\/baccala-mantecato-alla-veneziana\/","title":{"rendered":"BACCALA&#8217; MANTECATO ALLA VENEZIANA"},"content":{"rendered":"<p>Eccovi uno dei miei piatti preferiti, da cucinare sempre, ma adesso che si avvicina la Vigilia di Natale \u00e8 ancora meglio, visto che di solito si mangia pesce.<\/p>\n<p>Ricetta veneziana per eccellenza, il baccal\u00e0 mantecato<strong>*<\/strong> \u00e8 una delizia che abbisogna di pochissimi ingredienti ovviamente molto buoni, ma il pi\u00f9 importante \u00e8 uno: l\u2019olio di gomito.<\/p>\n<p>Sotto ragazzi, la fatica muscolare sar\u00e0 ricompensata dalla bont\u00e0 assoluta di questo piatto!<\/p>\n<p><strong>* MANTECARE<\/strong>, ovvero &#8220;mescolare fino ad ottenere una consistenza cremosa&#8221;. Di solito si usa questo verbo riferendosi alla mantecatura dei risotti, siginificando l&#8217;aggiunta di burro e\/o formaggio. In questo caso non c&#8217;\u00e8 burro ma olio.<\/p>\n<p>E voil\u00e0 pure un p\u00f2 di chiarezza sulla terminologia specifica!<\/p>\n<p><strong>INGREDIENTI PER UN RICCO ANTIPASTO<\/strong><\/p>\n<p><strong><\/strong>500 g di baccal\u00e0 ammollato (in un unico trancio, consiglio il filetto, mai la pancia che \u00e8 piuttosto grassa o la coda che \u00e8 troppo bassa)<\/p>\n<p>olio di oliva qb (o olio di semi), almeno mezzo litro<\/p>\n<p>1 spicchio d\u2019aglio (FACOLTATIVO)<\/p>\n<p><span style=\"color: #ffffff;\"><strong>.<\/strong><\/span><\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p><strong><\/strong>Prima di cominciare, due parole sull\u2019olio.<\/p>\n<p>La scelta \u00e8 tra quello d\u2019oliva o di semi. Di norma si usa quello di semi poich\u00e9 il sapore \u00e8 pi\u00f9 delicato, ma un buon compromesso per la salute \u00e8 l\u2019utilizzo di olio d\u2019oliva. Sconsiglio l\u2019extravergine perch\u00e9 d\u00e0 in effetti un sapore troppo marcato alla preparazione.<\/p>\n<p>E adesso si parte. Dissalate il baccal\u00e0 per bene, almeno per 3 giorni, se non lo \u00e8 gi\u00e0.<\/p>\n<p>Avvolgetelo stretto nella carta stagnola e cuocetelo a secco, cio\u00e8 senza mettere nulla, in una pentola coperta e a fuoco basso per circa 30 minuti.<\/p>\n<p>Una volta cotto spellatelo e fate intiepidire. Non gettate l\u2019acqua di cottura che sar\u00e0 fuoriuscita dal cartoccio, potrebbe servirvi nel caso il baccal\u00e0 necessitasse di sale.<\/p>\n<p>Mettete quindi il baccal\u00e0 in un contenitore dai bordi un po\u2019 alti, sbriciolatelo bene con le mani e iniziate ad aggiungere olio d\u2019oliva a filo sbattendo energicamente con una frusta fino a montarlo creando un composto morbido.<\/p>\n<p>Il baccal\u00e0 si sfalder\u00e0 e diventer\u00e0 cremoso. L\u2019olio va aggiunto molto lentamente perch\u00e9 ad un certo punto il baccal\u00e0 smetter\u00e0 di inglobarlo.<\/p>\n<p>La fase di mantecatura con la frusta durer\u00e0 circa 20-30 minuti. Abbiate pazienza\u2026e muscoli! La cucina \u00e8 anche fatica fisica&#8230;<\/p>\n<p>Se vi piace l\u2019aglio ma non volete usarlo tritato, apritelo a met\u00e0 e sfregatelo bene sui bordi della ciotola dove metterete il baccal\u00e0 per lavorarlo.<\/p>\n<p>Servite il baccal\u00e0 mantecato formando delle quenelle su dei crostini di pane o di polenta bianca abbrustolita.<\/p>\n<p>E buon Cenone!<\/p>\n<p><strong>NOTA<\/strong><\/p>\n<p>Il baccal\u00e0 mantecato pu\u00f2 essere conservato ben coperto in frigorifero per un paio di giorni.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Eccovi uno dei miei piatti preferiti, da cucinare sempre, ma adesso che si avvicina la Vigilia di Natale \u00e8 ancora meglio, visto che di solito si mangia pesce.
