L\u2019arzilla, o razza, \u00e8 un pesce molto semplice da lavorare, non ha spine e si trova in pescheria gi\u00e0 spellato e pronto per questa preparazione in cui si usano appunto solo le ali.<\/p>\n<p>Io vi propongo questo piatto in bianco ma esiste anche una versione col pomodoro, a voi la scelta.<\/p>\n<p>Non avete pi\u00f9 scuse per provare questa meraviglia\u2026ne sarete conquistati solo sentendo il profumo!<\/p>\n<p><span style=\"color: #ffffff;\"><strong>.<\/strong><\/span><\/p>\n<p><strong>INGREDIENTI X 4 PAX <\/strong><\/p>\n<p>1 broccolo romanesco<\/p>\n<p>2 ali di arzilla ( = razza, circa 1 kg)<\/p>\n<p>1 costa di sedano<\/p>\n<p>1 carota<\/p>\n<p>1 cipolla<\/p>\n<p>qualche gambo di prezzemolo<\/p>\n<p>qualche alice sott\u2019olio<\/p>\n<p>1 spicchio d\u2019aglio<\/p>\n<p>\u00bd bicchiere di vino bianco secco<\/p>\n<p>qualche cucchiaio di polpa di pomodoro (FACOLTATIVO)<\/p>\n<p>200 g di spaghetti spezzati (o maltagliati)<\/p>\n<p>olio evo<\/p>\n<p>peperoncino<\/p>\n<p>sale<\/p>\n<p><span style=\"color: #ffffff;\"><strong>.<\/strong><\/span><\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p><strong><\/strong>Per prima cosa preparate il brodo vegetale mettendo in acqua fredda sedano, carota, cipolla, i gambi del prezzemolo, poco sale e le ali di arzilla, che avrete lavato bene sotto acqua corrente fredda.<\/p>\n<p>Accendete il fuoco e fate bollire piano per circa 20 minuti.<\/p>\n<p>Trascorso questo tempo scolate il pesce e con un cucchiaio raschiate le ali per estrarre la carne che si staccher\u00e0 molto facilmente e che terrete da parte. Eliminate la pelle e la cartilagini. Reinserite la carcassa dell\u2019arzilla nel brodo.<\/p>\n<p>Dividete il broccolo in piccole cime pi\u00f9 o meno della stessa grandezza e lavatelo bene.<\/p>\n<p>In una casseruola fate soffriggere l\u2019aglio in camicia schiacciato in olio evo. Estraete l\u2019aglio una volta biondo, abbassate il fuoco e fate sciogliere lentamente le alici.<\/p>\n<p>Aggiungete il peperoncino (e il pomodoro se decidete di metterlo) e le cime di broccolo. Fate insaporire per qualche minuto e sfumate con il vino bianco.<\/p>\n<p>Una volta evaporato il vino aggiungete lentamente qualche mestolo di brodo per far cuocere il broccolo che dovr\u00e0 restare croccante.<\/p>\n<p>Dopo circa 5-7 minuti buttate la pasta direttamente all\u2019interno del broccolo.
