{"id":1294,"date":"2012-08-23T16:05:00","date_gmt":"2012-08-23T16:05:00","guid":{"rendered":"http:\/\/www.gingerforbreakfast.it\/?p=1294"},"modified":"2018-04-16T08:48:05","modified_gmt":"2018-04-16T06:48:05","slug":"sua-maesta-sicilia-ovvero-caponata-di-melanzane","status":"publish","type":"post","link":"https:\/\/gingerforbreakfast.it\/blog\/sua-maesta-sicilia-ovvero-caponata-di-melanzane\/","title":{"rendered":"SUA MAESTA&#8217; SICILIA ovvero CAPONATA DI MELANZANE"},"content":{"rendered":"<p>Cominciamo col dire che di questo piatto esistono innumerevoli varianti, tutte eccellenti.<\/p>\n<p>Quella che vi propongo arriva dalle parti di Messina ed \u00e8 in bianco, senza pomodoro.<\/p>\n<p>Qualunque sia la ricetta, l&#8217;alchimia della caponata \u00e8 sempre una sorpresa che toglie le parole.<\/p>\n<p>Provare per credere!<\/p>\n<p><strong>CAPONATA DI MELANZANE<\/strong><\/p>\n<p><strong>INGREDIENTI<\/strong><\/p>\n<p>5 melanzane tonde<\/p>\n<p>200 gr olive verdi in salamoia snocciolate<\/p>\n<p>50 gr pinoli<\/p>\n<p>50\/70 gr capperi sotto sale<\/p>\n<p>un mazzo di sedano, la parte tenera<\/p>\n<p>olio<\/p>\n<p>sale<\/p>\n<p>aceto di vino bianco<\/p>\n<p>zucchero<\/p>\n<p>aglio e cipolla<\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p>Tagliare le melanzane a cubetti e lasciarle in acqua con sale per circa 1 ora.<\/p>\n<p>Quindi sciacquarle, asciugarle e friggerle in olio di semi caldissimo.<\/p>\n<p>Lasciarle sgocciolare molto bene.<\/p>\n<p>In una padella friggere l&#8217;aglio (intero) e la cipolla affettata sottilissima.
